Abstract
Centralized commissaries play a crucial role in food quality and safety for Quick Service Restaurants (QSRs), particularly for high-risk foods such as chicken. This Egypt-based case study developed and validated a strategic supplier performance management framework within a central commissary supplying a QSR chain. The framework integrates quality assurance protocols with systematic microbiological monitoring to address gaps in traditional supplier documentation and audit approaches. Results demonstrate that the integrated framework significantly improves detection of microbiological non-conformities, enhances supplier accountability, and reduces food safety incidents across the supply chain.
